Hefei, the capital city of Anhui province, is famous of breeding and eating fresh water lobsters. In 2007，Hefei's aggregated annual production of lobster reached 30,000 tons, farmed over an area of 70,000 acres. Hefei is recognized as "China’s fresh water lobster breeding capital" by China Fishery Association in 2007. Thirty-nine new farms, each with an area of over 200 acres were built with the support of the local government. Hefei hosts an annual lobster festival with features art performances and trade exhibitions.
Xiatang town, located at Changfeng county, is the largest lobster breeding base of Hefei city. At the end of 2008, Xiatang town has a lobster breeding area of 38,000 mu, annal output of lobster reached 12,000 tons. Lobster bred in Xiatang town, are mainly sold to Jiangsu, Hubei, Henan, Shanghai, Beijing and other big cities, furthermore, there have 100 tons of frozen and boiled lobsters are exported to America, South Korea, Japan and other countries every year.
Lobster has already become a distinctive food in Hefei. More than 400 restaurants have engaged in this business with staff of about 35,000 people. Every year, eight to ten ton lobsters will be consumed in Hefei. The most famous lobster restaurants here are located in Niguo Road. In such a short street, there are over 100 lobster restaurants.
